Flourless High Protein Vegan Pancakes!

FLOURLESS HIGH PROTEIN VEGAN HEART HEALTHY PANCAKES!
In honor of Valentines Day and Heart Health Awareness Months I’m sharing a heart-healthy breakfast full of protein, fiber and fruit - all the yumminess you want, without any flour, butter, or sugar! This is winter comfort food at its finest, and healthiest!
ORGANIC FLOURLESS VEGAN PROTEIN PANCAKES:
-1 cup organic almond flour (100% blanched almonds – you can buy in most health food stores)
-1/2 cup organic apple sauce (instead of egg -1 tablespoon vanilla extract
-Pinch of himalayan sea salt
-1/2 teaspoon cinnamon
-1 tablespoon of fiber powder
-1/2 cup organic protein powder
-1-2 tablespoons of light agave nectar
-3/4 cup organic almond milk
-1/4 cup goji berries or fresh blueberries (for heart health!)
-2 teaspoons of organic coconut oil*
*I melt the coconut oil in a saucepan first – add this ingredient last otherwise it gets hard before you start mixing.
Just mix together with fork or hand mixer if you have one. After it’s all mixed I add the fruit and then mix again by hand, so fruit is evenly distributed..
Put a little coconut oil in skillet and make up your pancakes.
VENUS QUICK TIP: Make the entire batch, wrap in foil, stick in fridge and pop in toaster right before you leave the house, spread almond or peanut butter, a sprinkle of cinnamon and GO – EASY!
