Delicious way to PREPARE KALE

kale-saladRaw Kale Salad with pear, pine nuts and goji berries:

YUMMY KALE SALAD:
Ingredients:
2 bunches Lacinato kale, washed, dried and chopped
½ cup goji berries (or currants)
½ cup pine nuts
1 sliced pear
2 teaspoons garlic, minced
2 tablespoons fresh lemon juice
3-4 tablespoons olive oil
Dash of Himalayan sea salt
Sliced grated parmesan (real parmesan not powder)

Directions:
Wash, and chop kale. I use kitchen scissors and just cut long strips. Place kale and finely chopped garlic in bowl, drizzle with olive oil and a dash of sea salt. Toss and evenly coat. Let marinate in the oil for an hour. Makes the kale less crunchy. After an hour or so, place in large bowl, add lemon juice, goji’s or currants, pine nuts and toss.

Place on salad plates. Drizzle a bit more olive oil, if needed. Add the sliced pear to each salad and place a few small slices if sliced parmesan on top.
