Skinny Roasted Sweet Potatoes – No butter no syrup!

- ¼ cup olive oil
- 1 chopped shallot
- 1 teaspoon Himalayan sea salt
- Dash of black pepper
- 1 tablespoon ground cinnamon
- 1.5 tablespoon light agave nectar
- ½ cup walnuts

This delicious sweet potato dish is full of vitamins, fiber, anti-oxidants, and so much sweetness you won’t even miss the butter, syrup and marshmellows – enjoy!
SKINNY ROASTED SWEET POTAOES with Cinnamon and Walnuts
I make a mxed medley of sweet potatoes, russet potatoes, carrots and parsnips. Everything is the same – just more veggies.
Preheat over to 365 degrees.
Wash peel and slice your sweet potatoes and shallots. Place potatoes and shallots in large mixing bowl, pour olive oil and salt in bowl. Stir until potatoes are coated evenly.
Place in baking dish and bake for 15 minutes. Turn potatoes over and bake an additional 10 minutes. Remove baking dish and drizzle on agave, cinnamon and pecans. Place in oven for another 10 minutes.
Venus Quick Tip: On food prep day, wash, peel and chop potatoes and shallots. Store in container until you are ready use.
Venus Prep Tip: For nuts, pour them on to a hand towel, place another hand towel over them and crush with a mallet. So easy.
