What’s For Dinner? No Cooking, Easy, Healthy Smoked-Salmon & Greens

Welcome back to What’s For Dinner Tonight. The VIB section where we feature a healthy, nutritious recipe each week.

It’s been so hot, who feels like cooking? Not me, so I’m guessing you might be feeling the same way. Today I’m sharing a high protein, low-fat, super healthy, easy, and delicious smoked salmon dish. It’s light enough to get you through the Summer Count down, yet satisfying enough that you will really enjoy eating it. Isn’t that what it’s all about.

Smoked Salmon with Arugula, Avocado and Toast Points:

-1 package Nova Smoked Wild Salmon
-1 package organic Arugula
-1 organic avocado
-1 package chives
-2 slices Ezekiel 7 Grain Bread
-Organic Olive Oil

Toast the bread. While it’s toasting spread the arugula on a dinner plate. Slice the salmon in triangle shapes. Cut the toast in four pieces and arrange on the plate. Place salmon on toast points, add a few pieces of chopped chives to each piece, and top with a slice of avocado. Drizzle generously with olive oil.

VIB TIP: Optional add-ons are asparagus, cucumbers, olives, pumpkin seeds, tomato, onion.
