What’s For Dinner Tonight? Healthy Grilled Shrimp over Seasonal Greens!

Welcome back to What’s For Dinner Tonight.
Make this low-fat, high protein, healthy and delicious, Grilled Shrimp over Fresh Seasonal Greens for dinner tonight. Each ingredient is added with our countdown to summer goals in mind, weight loss, metabolism boosting, water-weight loss, and of course, lots and lots of taste!
Now that Spring is here, we will be incorporating the very best of the season’s fresh vegetables and fruits. Buying fruit and veggies that are in season helps support local farmers, give you the healthiest choices with the most vitamins, enzymes, and antioxidants intact, and it brings the costs way down. May is the month for asparagus, arugula, chard and scapes. Let’s see what we can do with those!
GRILLED SHRIMP OVER SEASONAL GREENS:
-INGREDIENTS:
-One pound of Large Shrimp, peeled and deveined
-2 Bunches of Arugula
-1 Bunch Asparagus
-1 Bunch Scapes
-1 Avocado
-1 Grapefruit
-Olive Oil
-Himalayan sea salt
-Red Pepper flakes
-Lemon Juice
-Balsamic Vinegar

I know, I know, what the heck are scapes? Isn’t that one of the Professor’s in Harry Potter? No, that’s Professor Snape. Scapes, on the other hand, are a form of garlic. I still remember the first time I discovered them, and cooked with them, a delicious memory indeed! They look a little like scallions.
DIRECTIONS:
-Bring a pot of water to boil. Add Asparagus (cut off bottom stems). Cook about 4 minutes.
-Preheat a skillet on medium-high heat.
-Add a generous drizzle of olive oil
-Add about 1/4 cup of the diced scapes
-Add the shrimp deveined shrimp
-Add a dash of himalayan sea salt
-Add a generous dash of red pepper flakes
-Sauté the shrimp until they start to turn light pink.
Cook no longer than 5 minutes or until the shrimp are a nice shade of pink. Do not overcook!
Serve shrimp, scapes, and asparagus over a bed of arugula. Add diced avocado and a few grapefruit slices! Drizzle Olive Oil, fresh lemon, and balsamic vinegar over your dish as the ‘dressing’.

Great idea. I love scapes and always looking for a new recipes. Also since my kids like shrimp this is a good way to cook an adult meal and kids’ meal at the same time – shrimp scampi (scapi) for them and this for us.
